🌽 Recipe: Corn Casserole

Corn: is a healthy option for those managing blood sugar levels.

Ingredients (Serves 9):

·       8.5 ounce cornbread muffin mix

·       1 cup nonfat plain Greek yogurt

·       1 can corn kernels drained

·       1 can creamed corn

·       2 tablespoons

·       1 large egg

Nutritional Facts (Per Serving): Calories: ~214, Protein: ~6g,Carbohydrates: ~32g, Fiber: ~1g, Sugars: ~19g, Fat: ~7g, Saturated Fat: ~2g,Iron: ~1 mg, Sodium~422 mg, Potassium: ~171 mg, Fiber ~3g, Vitamin C: ~3 mg, Vitamin A:~108 IU, Calcium: ~45 mg

Instructions:

1.      Preheat oven to 350°F and prepare a 8×8" baking pan with nonstickspray.

2.     In a large bowl, whisk the egg. Add Greek yogurt and olive oil andwhisk again. Stir in the creamed corn and drained corn kernels.

3.     Add the corn muffin mix to the wet ingredients and mix until combined.

4.     Pour into prepared pan and bake for 45-50 minutes, or until the edgesare golden brown and the center is not wet and jiggly.

5.     Let cool 5-10 minutes before serving and enjoy.
