Recipe: Veggie-Packed Whole Grain Fried Rice

Serves: 4–6

Ingredients

  • 3 cups cooked brown rice or brown/white rice blend (day-old works best)
  • 1 tablespoon vegetable or olive oil
  • 2 eggs, lightly beaten
  • 2 cups frozen mixed vegetables (broccoli, carrots, peas, edamame, or stir-fry blend)
  • 1–2 cups cooked lean protein (chicken, tofu, shrimp, or beans)
  • 2 tablespoons low-sodium soy sauce (add more to taste)
  • Optional: minced garlic, ginger, green onions, sesame seeds

Instructions

  1. Heat oil in a large pan or wok over medium heat.
  2. Add eggs and scramble until just set. Remove from pan and set aside.
  3. Add frozen vegetables to the same pan and cook until heated through and tender.
  4. Stir in cooked rice and protein, breaking up any clumps.
  5. Return eggs to the pan, add soy sauce and optional seasonings, and stir until evenly combined and warmed through.
  6. Serve immediately. Garnish with green onions or sesame seeds if desired.
